(Food) - Cheese Cupcake Recipe

I was finally able to bake cupcakes yesterday after postponing for a few days. Stupid me, I thought I had baking powder when what I had was baking soda so I had to ask the hubby to go on a grocery run. It was my first time to make cupcakes and they turned out better than expected. They were moist on top, not too sweet, adequately cheesy and had a welcome orange-y taste. They also tasted yummy after taking food porn-y pictures of them on my phone.

Cheese Cupcake

Ingredients
  • 1 3/4 cups flour, sifted
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/2 tsp orange extract
  • 8 ounces sweetened condensed milk
  • 1/2 cup Velveeta cheese, shredded (I used quickmelt cheese as an alternative)
  • 1/2 cup cheddar cheese, shredded
Directions
  1. In a medium bowl, combine flour, baking powder and salt. Set aside.
  2. In a large bowl, beat butter, sugar, eggs and orange extract.
  3. Pour in flour mixture in thirds, adding half of the sweetened condensed milk in between (beginning and ending with flour mixture).
  4. Add in grated Velveeta cheese and blend well.
  5. Put mixture in muffin cups, 3/4 full only.
  6. Top with grated cheddar cheese.
  7. Bake in 350F oven for 20-25 minutes.
  8. Cupcake stays moist for 1 week in room temperature (covered in tight lid container).

Charmingly crumbly (my friend said I can replace white for brown sugar to avoid this)
