I was finally able to bake cupcakes yesterday after postponing for a few days. Stupid me, I thought I had baking powder when what I had was baking soda so I had to ask the hubby to go on a grocery run. It was my first time to make cupcakes and they turned out better than expected. They were moist on top, not too sweet, adequately cheesy and had a welcome orange-y taste. They also tasted yummy after taking food porn-y pictures of them on my phone.
I got the recipe from this website website so you can also try them for yourselves.
Cheese Cupcake
Ingredients
- 1 3/4 cups flour, sifted
- 2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsalted butter
- 1/2 cup granulated sugar
- 2 large eggs
- 1/2 tsp orange extract
- 8 ounces sweetened condensed milk
- 1/2 cup Velveeta cheese, shredded (I used quickmelt cheese as an alternative)
- 1/2 cup cheddar cheese, shredded
- In a medium bowl, combine flour, baking powder and salt. Set aside.
- In a large bowl, beat butter, sugar, eggs and orange extract.
- Pour in flour mixture in thirds, adding half of the sweetened condensed milk in between (beginning and ending with flour mixture).
- Add in grated Velveeta cheese and blend well.
- Put mixture in muffin cups, 3/4 full only.
- Top with grated cheddar cheese.
- Bake in 350F oven for 20-25 minutes.
- Cupcake stays moist for 1 week in room temperature (covered in tight lid container).

I plan to post more about my foray into cooking, DIY and other mom things so I hope you'll stay tuned for that. See you soon!
